Mocha Meat Rub

Mocha Meat Rub


One of the many spice mixes that I made with my mom was a meat rub made with cocoa and coffee.  I know it sounds a bit unusual, but it is so delicious.  It’s good for more than just meat as well.  We used it on baby red potatoes, and the flavor was amazing.


I rubbed this on a roast, and let it sit in the fridge all day.  Then we baked it with the potatoes in oven for 2 ½ hours at 325 F.  This combination was absolutely delightful.  My brother (who is very picky about his meat) enjoyed it.  The recipe listed below will make enough for at least 3  meals.


Ingredients:
¼ cup coffee grounds
¼ cup brown sugar, packed
¼ cup cocoa, unsweetened
½ Tbsp cinnamon, ground
½ Tbsp cardamom, ground
½ Tbsp allspice, ground
¼ Tbsp ginger, ground
¼ Tbsp salt
¼ Tbsp nutmeg, ground


Directions:
  • Combine all spices in a medium bowl and mix well
  • Any remaining spice can be stored in an airtight container
